🥘 Traditional Punjabi Chhole Recipe Using Gajanand Chhole Masala
🛒 Ingredients:
- 1 cup dried chickpeas (soaked overnight) or 2 cups canned chickpeas
- 2 tbsp Gajanand Chhole Masala
- 2 onions (finely chopped)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder (optional)
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tbsp oil or ghee
- 1 tsp lemon juice
- 2 tbsp chopped coriander leaves
- Salt to taste

1️⃣ Prepare the Chickpeas:
- Soak 1 cup chickpeas overnight and pressure cook them with 3 cups of water until soft (3-4 whistles).
- If using canned chickpeas, drain and rinse well.

- Heat oil/ghee in a pan and add cumin seeds.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook for another minute.
- Add tomato puree and cook until oil separates.
3️⃣ Add Spices:
- Mix in Gajanand Chhole Masala, turmeric, red chili powder, coriander powder, and salt.
- Cook the spices for 2-3 minutes to enhance the flavors.
4️⃣ Simmer the Chhole:
- Add the boiled chickpeas along with some water (as needed for gravy).
- Simmer for 10-15 minutes so the flavors blend well.
5️⃣ Final Touches:
- Add garam masala and lemon juice for extra flavor.
- Garnish with chopped coriander leaves.
