🥣 Traditional Sambhar Recipe (Using Gajanand Sambhar Masala)
🛒 Ingredients:
For Sambhar:
- 1 cup Toor Dal (Pigeon Pea Lentils)
 - 2 tbsp Gajanand Sambhar Masala
 - 2 tbsp Tamarind Pulp
 - 1 tsp Turmeric Powder
 - 1 tsp Red Chilli Powder
 - 1 Onion (chopped)
 - 1 Tomato (chopped)
 - 1 Drumstick (cut into pieces)
 - ½ cup Mixed Vegetables (Carrot, Pumpkin, Brinjal, etc.)
 - 2 tbsp Oil
 - Salt to taste
 
For Tempering (Tadka):
- 1 tbsp Oil or Ghee
 - 1 tsp Mustard Seeds
 - 1 tsp Cumin Seeds
 - 2 Dry Red Chilies
 - A few Curry Leaves
 - A pinch of Asafoetida (Hing)
 
👨🍳 Cooking Instructions:
1️⃣ Cook the Dal:
- Wash and pressure cook Toor Dal with turmeric and 2 cups of water for 3-4 whistles.
 - Mash the cooked dal and keep it aside.
 
2️⃣ Prepare the Vegetables:
- In a pan, heat oil and sauté onions until golden brown.
 - Add tomatoes and cook until soft.
 - Add drumsticks, mixed vegetables, and a little water. Cook until vegetables are tender.
 
3️⃣ Add Sambhar Masala & Tamarind:
- Mix in Gajanand Sambhar Masala, red chili powder, salt, and tamarind pulp.
 - Let it simmer for 5-7 minutes.
 
4️⃣ Combine Dal & Vegetables:
- Add the mashed dal to the pan.
 - Adjust water consistency and let it simmer for 10 minutes.
 
5️⃣ Prepare Tempering (Tadka):
- Heat oil/ghee in a small pan.
 - Add mustard seeds, cumin seeds, red chilies, curry leaves, and hing.
 - Pour this tadka over the sambhar and mix well.
 
6️⃣ Serve Hot:
- Garnish with fresh coriander leaves.
 - Serve with steamed rice, dosa, idli, or vada.
