Recipe for Soft & Spongy Nylon Khaman (Using Gajanand Mix)
🧂 Ingredients (from the pack):

Gajanand Nylon Khaman Mix – 200g

Water – approx. 250ml
-
Oil – 1 tbsp (for batter)

Eno Fruit Salt (plain) – 1 sachet (or 1 tsp)

For Tempering (Tadka):
-
Oil – 2 tbsp
-
Mustard Seeds – 1 tsp
-
Curry Leaves – 8–10
-
Green Chillies – 2–3 (slit)

Water – ½ cup
-
Sugar – 1 tbsp
-
Lemon Juice – 1 tbsp

👨🍳 Preparation Steps:
🔹 1. Prepare the Batter

In a bowl, mix 200g Gajanand Khaman Mix with approx. 250ml water and 1 tbsp oil.

Stir well to form a smooth, lump-free batter.

Just before steaming, add Eno fruit salt, mix gently in one direction. Batter will become light and airy.
🔹 2. Steam the Khaman

Grease a dhokla plate or thali.
-
Pour the batter into the plate and steam for 15–20 minutes on medium flame.

Check with a toothpick – if it comes out clean, it’s done.

Let it cool slightly and cut into square pieces.
🔹 3. Prepare the Tempering

Heat 2 tbsp oil in a pan.
-
Add mustard seeds. Once they crackle, add curry leaves and green chillies.
-
Add ½ cup water, 1 tbsp sugar, and 1 tbsp lemon juice.

Boil for 1 minute and pour evenly over khaman pieces.
🍋 Serving Suggestion:
Serve warm, garnished with fresh coriander, grated coconut, and sev. Enjoy with green chutney or sweet chutney.

Ingredients:

Microwave Method:

Mix Gajanand Khaman Mix, water, and oil into a smooth batter.

Add Eno just before microwaving and mix gently in one direction.

Pour into a greased microwave bowl (not more than half full).

Microwave on high power (900W) for 4–6 minutes (depending on quantity and microwave).

Let it rest for 2 minutes. Cut into pieces.

Prepare tempering (same as stovetop method) and pour over khaman.
