🧑🍳 Recipe: Sabudana Khichdi (Vrat Special)
Prep Time: 6–7 hours soaking
Cook Time: 15 minutes

✅ Ingredients:
- 
Gajanand Sabudana – 1 cup
 - 
Roasted peanuts (crushed) – ½ cup
 - 
Boiled potatoes – 1 (medium, chopped)
 - 
Green chili – 1 (finely chopped)
 - 
Cumin seeds – 1 tsp
 - 
Ghee or oil – 2 tbsp
 - 
Rock salt (Sendha Namak) – as per taste
 - 
Fresh coriander – chopped (optional)
 - 
Lemon juice – 1 tsp (optional)
 
✅ Preparation:
- 
Soaking Sabudana:
- 
Rinse sabudana 2–3 times until water runs clear.
 - 
Soak it in water (just 1 inch above sabudana level) for 6–7 hours or overnight.
 - 
After soaking, fluff with a fork – grains should be separate and soft.
 
 - 
 - 
Cooking:
- 
Heat ghee/oil in a pan. Add cumin seeds and chopped green chili.
 - 
Add chopped boiled potato and sauté for 2–3 minutes.
 - 
Add soaked sabudana, crushed peanuts, and rock salt.
 - 
Cook on medium flame for 6–8 minutes, stirring gently.
 - 
Optional: add lemon juice and garnish with coriander.
 
 - 
 - 
Serve Hot:
- 
Serve with curd (yogurt) or enjoy plain during upvas.

✅ Tips:
- 
Do not oversoak or add too much water—sabudana may become sticky.
 - 
Roasting peanuts fresh adds great crunch and aroma.
 - 
For variation, add grated coconut or a little sugar for sweetness.
