👨🍳 How to Prepare Idlis (Recipe):
Ingredients:
-
1 cup (approx. 200g) Gajanand Idli Mix Flour
 -
1 cup water (approx. 200 ml)
 -
Salt to taste
 -
1 cup curd (for fermentation) (optional but recommended)
 -
1 tsp Eno Fruit Salt or baking soda (for instant fluffiness)
 -
Oil for greasing the idli molds

Instructions:
-
Mix Batter:
In a bowl, combine 1 cup Gajanand Idli Mix with 1 cup curd and salt to taste. Add water gradually to get a smooth, thick batter. -
Rest (Optional):
Let the batter rest for 15–20 minutes to enhance softness. (Skip if using Eno) -
Add Rising Agent:
Just before steaming, add 1 tsp Eno Fruit Salt or baking soda and mix gently. You’ll see the batter rise and become airy. -
Prepare Molds:
Grease idli molds lightly with oil. Pour the batter into each mold, filling only ¾ of the way. -
Steam:
Place molds in a steamer with boiling water. Steam for 10–12 minutes on medium heat. Check doneness by inserting a toothpick—it should come out clean. -
Serve:
Remove idlis from molds using a wet spoon. Serve hot with sambar and coconut chutney.
